Ingredients:

For the Quinoa Salad:

  • One (1) of cup quinoa, and rinsed and drained*
  • Two of cups water or vegetable broth
  • Rinse and drain 1 can (15 ounces) of chickpeas.
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • Half, of red onion, finely chopped
  • Half of, cup Kalamata olives, sliced
  • Half of, cup crumbled feta cheese
  • Fresh parsley, chopped, for garnish

For the Lemon Vinaigrette:

  • 1/four  cup of extra-virgin olive oil
  • Two of tablespoons fresh lemon juice
  • One of teaspoon Dijon mustard
  • One of clove garlic, minced
  • Salt and black pepper to taste

Instructions:

1) Cook the Quinoa:

Bring ” 2 ” cups of water, or vegetable broth to a boil in a medium saucepan!. Add the quinoa, lessen warmth to low, cover, and simmer for 15 until 20 minutes !, or till the quinoa is cooked and the liquid is absorbed.. Use a fork to fluff the quinoa and permit it to cook welll!.

*Prepare the Lemon Vinaigrette:

In a small bowl, whisk collectively olive oil, clean lemon juice well, and Dijon mustard, minced garlic, salt, and black pepper. Set aside!.

2) Assemble the Quinoa Salad:

In a massive blending bowl, integrate the cooked quinoa*, chickpeas, cherry tomatoes, cucumber,  and purple onion, and Kalamata olives, and crumbled feta cheese!.

3) Dress the Salad:

Pour the prepared lemon vinaigrette over the quinoa salad. Toss everything together to ensure the salad is well coated with the flavorful dressing.

4) Garnish and Chill:

Garnish the quinoa salad with chopped fresh parsley. To allow the flavors to blend, make sure to cover the bowl and refrigerate for at least 30 minutes!..

5) Serve and Enjoy:
